PB banana protein pancakes

My love for banana pancakes is still big. Even though it takes more time to make than any other of my favourite breakfasts, it's still a winner. Yesterday morning, I made banana protein pancakes with peanut butter and it tasted like heaven! It has more ingredients than regular banana pancakes but they also contain even more protein due to the whey protein, peanut butter and chia seeds. If you don't like peanut butter, you can also easily make them without or replace with almond butter.
- 2 ripe bananas
- 2 eggs
- 1 scoop of whey protein (any flavour you like)
- 2 teaspoons of peanut butter (or any nut butter without palm oil - Meridian makes the best nut butters in my opinion)
- 2 teaspoons of chia seeds
- one small handful of oats
- coconut oil

Combine the eggs, bananas, whey protein, peanut butter, chia seeds and oats in a blender and blend until it's a smooth batter. I then pour the batter into my protein shaker because it makes it easier to pour small pancakes. Add some coconut oil to a pan on medium heat and start frying your mini pancakes! (I made 5 at a time and it took me 3 'rounds' to make these) Stack them on a plate and add any toppings you like. I added Greek yoghurt in the middle with some berries, and topped the pancakes with smooth peanut butter - this one is the best. If you make too many pancakes or you double the recipe, you can easily keep them in the fridge and take them with you as a snack; particularly good if you need to take a flight in the early morning, trust me!
